Not a WSM - changing electric to charcoal


 
I have a Meco stainless electric bullet smoker and plan to mod to charcoal. Here is my plan after reading a bunch of the readers posts on WSM mods.
1. remove electric element
2. add weber vents top and bottom
3.reuse water pan as ash catcher.
4. use weber charcoal holder with grate wired in

when I go this route where will the best place be to locate the charcoal grate, right above ash catcher/water pan or a few inches above for air circulation? I don't plan to use water at all and will be smoking fish-tuna, salmon, etc.

I had unfortunate experience with salmon flavored turkey breast so this smoker will be only for fish once I season very well and very hot.

I think you can set it right on top of the pan for fish, but that depends on ..
When you say Weber charcoal holder do you mean the baskets or a ring like the WSM? Cause that goes back to your air-flow..

Hey Mike...

I started my smoking 'career' ;) with a Red Meco charcoal fired vertical water smoker back in 1976. Used it for 20 years. Ash pan finally rusted through. Shortly after I bought it, Meco came out with a conversion to do exactly the opposite of what you're doing...

Was mainly a rib smoker back then. But... (the Meco) did an excellent job of it !
