Mojo's Smoked and Flash Fried Wings - Anybody got a good copycat recipe?

Finally took a stab at this. I don't have a deep fryer, so seasoned with baking powder and salt to crisp the skin. 2 hours at 250 smoking with cherry, then 1/2 hour on the grill between 400 and 450. The wings are edible but too crisp. The color is about right Wondering if I should reduce the time or the temp?
