Cured and Hickory Smoked Rib Tips

It's been awhile since I've made these.
Spare rib trimmings cured with Tender Quick for 24 hours, soaked/rinsed/dried, and in the fridge for a few hours to form a pellicle.

The taste, to me, is somewhere between bacon and ham.

What a great way to jazz up a can of soup.

So, I take it you're now ready to head to the ballpark and get some of those cured ribs?
 
Great idea on how to use the trimmings, Bob! My wife will be thrilled if I use it to empty the freezer of the couple of bags of trimmings that are in there waiting for just such an idea!

Man, I enjoyed the visit too. Kind of ironic, I was thinking about doing some spares one day soon. I probably would have sealed up the trimmings and threw them in the freezer, never to be seen again. Might give this a try. Looks fantastic Bob.

Just put some rub on the trims too and cook them along with the ribs, some will get done before the slab does, (cook's snack) the larger ones may take a little longer.

I have some in the freezer that are going to get a cure after reading your post. Usually put them in the Instant Pot to make pulled pork, but this method looks like way more fun!!
