4 racks of Costco loin ribs. Mixed up some remnants of some different rubs I had.

8kg of Aussie heat beads, plus some oak and cherry.

Dumped two thirds of a chimney of lit coals on tap. Wanted more heat at the start. Last couple of cooks with CyberQ took too long to get up to temp so trying to give it some encouragement.

Filled the water pan.

I think this is around an hour in. Set up for 230f

Didn't get the timings the way I wanted because I had work commitments. Foiled for an hour or so with a dollop of butter and honey after almost 2.5 hours.
Took foil off and basted with Stubbs sticky and sweet. No more than 45 mins. Would have left in foil for longer I think but they came out OK. Had some bite and came off bone clean.

Beans were good. Red rice salad was excellent (made by the wife) that's a Mary Berry recipe.

That looks great! Blue Hog is pretty sweet and mixes well with other rubs (I sometimes mix with Plow Boys Yardbird). Your pics are making me hungry!
 
Love the picture of the bones! You know you did it right! Your ribs and sides all look delicious. Can't wait to use big fella (WSM) again soon.
