Beef Short Plate Ribs

Picked these up at Costco. First and only time I've ever seen my Costco have the full beef short plate ribs. Did them just like a brisket. Seasoned with SPOG, put them on for about 4 hours over oak and hickory chunks and then wrapped in butcher paper for about 3 more hours until probe tender. Then grilled some zuchhini and squash.

Those are looking fantastic, nice cook! I was just at our Costco last night, and didn't see these, I'll have to keep my eyes open - though I'm loving the prices on their prime briskets.
