Pork Ribs (Long cook unattended)

Hi,

Could I get some help here? I am cooking for a party of 20 or so. I am planning on doing 8 racks of ribs on my 18.5" WSM. I plan on applying the mustard+rub and setting it into my WSM for about 5-6 hours unattended (since I won't be home). I have a DigiQ ATC which will help with maintaining constant temps. I wont be able to spritz them for those 5-6 hours.


Any recommendations on recipes, methods, temps?

The party is this Saturday.

To do that, you would have to make sure your WSM doesn't get any hotter than 225 degrees. The way to do that, is to start your WSM with no more than six fully lit charcoals (minion method) and have your bottom vents closed to just a sliver from the very start. This will result is a couple hours below 200 degrees, and pretty much choke it off from getting over 225

FWIW, low and slow ribs are amazing, and the above method is how I do mine when cooking them on the WSM. Although I mop during the cook, so I've never left mine unattended, but I have gone a full six hours plus cooking like described
