With inspiration from the board, I smoked some cheese of my own last night. On @ 3:00pm, off @ 9:30pm. We tried a small slice after an hour or so & it seemed real bitter with a good aftertaste so I wasn't expecting to be able to eat it right away, but it was good right away.

The Cracker Barrel aged reserve cheddar - extra sharp white cheddar cheese is my favorite so far, not sure that I've tried the swiss yet.

This is what I used:

SmokinCube Pellet Smoker Cube (12 Inch ) - Stainless Steel Perforated Cubic Wood Pellet Smoker

Smokehouse Products 9760-020-0000 5-Pound Bag All Natural Hickory Flavored Wood Pellets

And yes, I will be doing it again.

Things I'll do differently next time: I'll put the smoke tube on the charcoal grate. This time I started it on the lower grate of my wsm - the wind was blowing like crazy all yesterday & I had all the vents wide open, there was a little extra heat it seems..... that's probably about the only thing I'll do different. I do want to take advantage of the cold weather, seems I could cold smoke about anything during the winter while it's as cold or colder than a refrigerator outside....so I'll want to do this again before summer.

I gotta get me one of those tubes, I like the one you got, it's reasonably priced. The smoked cheese looks great, I'm sure having the tube on the charcoal grate will keep the cheese from cooking. I'm telling you, those burgers look amazing Clint!
 
Looks great Clint! How did you like those Smokehouse Pellets? I have the A-MAZE-N smoker but I bought my pellets locally in a sporting goods store and was disappointed with them. Think I'm going to toss them and get some fresh.

First time I've ever used pellets but they put off a thin steady stream of smoke for well over 6 hours. I filled the tube a little over halfway. Flavor & smell was good, so I'd recommend them I guess :)

I'll try the smoker tube on the flavorizer bars next, I'll try with both pellets & chips to see if I have any sort of preference.
 
Looks like a great start Clint, I really like smoked cheese. I've been eyeballing a smoker tube at the sportsman's warehouse maybe I'll give it a go. Those burgers look great!
 
Clint - we love smoked cheese. I can't make it fast enough. Yours looks great. If you let it age for a week or so in the fridge (yeah good luck with that), the taste will mellow and be even more awesome...

Have you posted any threads? What's your favorite kind of cheese(s), how long, type of wood, do you use a smoke tube :) ???
 
Looking good from the 801....nice job buddy! I also love smoked cheese, pepper jack being my favorite.
 
Clint, that cheese is to die for but looking at the burgers you nailed that one. Everything is outstanding awesome job. Yes we are going to get one of those tubes real soon.
 
Awesome looking cheese, and those burgers are making me hungry. I'll have to smoke some cheese now, and I love that Tillamook white cheddar.
 
It's good! I picked up 10 half-pound assorted cracker barrel packs the other day, I'll be doing this again real soon.
 
I went to visit some family last weekend, took some smoked cheese, cold smoked (after oven roasting) almonds, and pulled pork. My brother & I were enjoying some ham & smoked tilamook sharp white cheddar paninis when the old man got there. We'd eaten most of his ham, so I had to tear into the pulled pork & use the last of his black forest ham, & some smoked swiss for his panini. I even cut it into squares for him :) (and squirted some dipping mustard on his plate :) )

Consider the maze-type pellet smoker, it's only $8 more and I think it might be easier to work with. The pellets I've been using are good so far, and cheap.

I have round 2 of cheeses underway right now. I just noticed that Cracker Barrel is made by Kraft, so i'll probably pick up some cheeses from Restaurant Depot next time.......
