Supperclub Brisket!

Hi Everyone,
After my initial posts regarding cooking multiple briskets. https://tvwbb.com/showthread.php?68867-Cooking-Multiple-Briskets-on-the-WSM and holding briskets. https://tvwbb.com/showthread.php?68902-How-long-can-you-hold-briskets-in-a-cooler-box I'm pleased to announce that the supperclub was an resounding success.

I smoked 3 Briskets for a total of 18 hours!! 12am to 6pm. The internal temp only hit around 190F, but it was amazingly juicy!!
I used dry aged high end Aberdeen Angus Beef at £14/Kg (Approx $17.62/kg.. $8/lb).. The amount of fat and collegen is different in every breed. So I may need reassess my final temp! What do people think.

I managed to keep the temp up to around the 250F mark.. The ambient probe was placed in the middle grate.. I made a middle grate using some bolts and a smaller grate, something i saw on the amazing TVWBB website.

That brisket looks wonderful and I am now craving brisket. It has been to long. Also love the plated pics. You hit it out of the park on this one.

That is some fine looking brisket! Looks tender and juicy. Smoke rings is good too. Your supper club probably voted to have the event at your house every time...
