White Bean Chicken Chili version 2.0

With inspiration from John Solak's cook, I finally gave this a try and boy was it good!

I seasoned the bscb with ~1T Bold Taco from Penzey's as the rub, and there were some leftover pecan chips in my smokin pouch.

sauteed 5 cloves of garlic & 3 medium yellow onions in 1/4 stick of butter, added 6 cups water & 5 bullion cubes and the jalapenos & blended with my immersion blender to make a big bowl of salsa verde (or something like that)

I chopped one of the breasts & blended that in the pot along with 1 (of 4) cans of great northern white beans (rinsed) - did this to give it some body so things would suspend & not all sink. After I was done with the blender I added 2 more diced onions & 3 cans of beans

added a bunch of cilantro & ate it. This was a first, definitely not the last

I've been entering all my meals in myfitnesspal for the last ~1.5 months, so I broke this down to know the per serving nutrition info...

4.33# BSCB: 2236 Calories, 25.8 g fat, 499 g protein

4 cans northern beans – Total: 1540 calories, 98 g protein, 28 g carbs
Each can: 385 calories, 24.5 g protein, 70 g carb x 4:

Butter: 4 Tbsp: 407 calories, 46.1 g fat

Jalapenos, 1 hab
5 bullion cubes
2T bold taco – one as rub, one in soup
5 cloves garlic
8 cups water
1 bunch cilantro



Totals: 5197 calories + 300 buffer = 5497, protein 627g, 117g fat, 280g carbs

It made 20 cups, here are the nutritional values per per 1 cup serving: (I eat 2-3 8oz cups at a sitting)

Calories: 275
Protein: 31.35g
Fat: 5.85g
Carb: 14g
