Treasure in the Fridge

It's been raining a lot & it gets dark early - makes documenting cooks difficult.
Last night was no exception.

The solution = ReHeatos: Some chile rellenos topped with home made Hatch enchilada sauce, gently warmed carne arrachera & jalapeno buttermilk cornbread.

Barb and I are doing the same thing, we stock piled some grilling leftovers and made some pizzas on the Kettle pizza and froze them before the winter weather hit. We were going to do some steaks tomorrow but we expect heavy rain (From the Calif storms) and very high winds, so it's freezer diving for tomorrow.
Must say those left overs do look Mas Fino
 
I find that leftovers are usually better than the originals as the spices have a chance to "get to know each other" ;) Looks very good (and spicy)!
