I am very proud to be a member of this great BBQ / Grilling forum. And I appreciate everything I learn from this joint.
And I am very proud to take part of the traditional and annual Smoke Day celebration.
I am a member of other BBQ / Grilling sites but none are better than TVWBB. None.
Enough brown-nosin'... here are the photos taken of the Smoke Day 12 Celebration in Raymond Wisconsin at the Pigvilion.

Got things started the night before prepping the ribs and seasoning (salt & pepper) the brisket...

earlier on Friday night, i got the WSM ready to fire up for the early morning brisket smoke...
SD12c.jpg

then 3am (my planned starting time) came and went.
Liz woke me and said, "Jim, it's 10 after 4... do you wanna get up?" and i muttered something like, "10 after 4, no sh*t?"
so i got up and lit the WSM.
Got the brisket on 25 minutes later.

after 5 or 6 hours, i wrapped the brisket in butcher paper

SD12h.jpg

...lined the bottom of the Weber Ranch with foil to catch pig drops from the ribs

SD12i.jpg

i used a dual snake, one with 70 Kingsford Professional Briquettes...
the other with 74 briqs... Yes, i counted them as i laid them.
Apple wood atop for smoke.

SD12j.jpg

6 racks of StLouie spares in the middle and turning as the snakes burn.
but the Ranch got too hot inside (i used a probe inside the grill)

SD12m.jpg

...so i decided to stop one snake and continue the cook with the ribs to the opposite side....

SD12o.jpg

...and that worked better.

anyway, removed the paper from the brisket i don't know when and prayed it'd get done soon....

meanwhile, Texas sausage was being re-smoked on the Performer using hickory wood for flavour.

Great photos Jim! Looks like it was a lot of fun with lots of great food, the brisket looks awesome (as do the ribs and sausage)!

That looks like the best smoke day I've ever seen. Of course I've only been around for eleven of them, so what do I know? :)

Great smoke and looks like all had a great time. You DA man Jim. Wish I could have been there. And I agree with Dustin, You Win Smoke Day!!!

Jim,

What an epic Smoke Day! The smiles on the faces of your guests pretty much says it all. Very cool to see the new Ranch Kettle running at near full capacity. Smoke Day XII at the P1Gvilion was one for the ages.

Looks like another great Smoke Day in Lampeville (yes, I'm renaming Raymond).

All in favor of changing the name "Smoke Day" to "Lampe Smoke Day" say I!

Awesome cook and pictures Jim!
