Sous Chef wanted meatballs. Safeway had ground turkey on sale so I loaded the freezer and held out a few packs for dinner. This is the base recipe we used. Added more herbs, and we also stuffed the meatballs with a piece of mozzarella.

Thanks Cliff! They were tatsy, no leftovers!

Tonight the sous chef gets to be in charge of the grinder. We have 20 pounds of pork shoulder to grind!
 
Those look fantastic Case. I really enjoy your posts. It's great to see a new generation of cooks/pitmasters in the making.
