Congrats to Tommy B for winning the corn throwdown. He's picked our next throwdown challenge:

WRAPPED IN BACON!

Entries must include a bacon wrap in some way, e.g. ABTs, bacon-wrapped fatties, bacon-wrapped asparagus, a bacon-wrapped burgers...let your imagination run wild!

My entry for the bacon throw down is Bacon Wrapped Pineapple ABT’s made with the basic #5 sauce and using Rich’s baby back rib rub. WOW!! That stuff is good.

Sauce, bacon and pineapple ready for assemble and then in a pan on rack ready to go out. Cooked indirect for 30 minutes then basiced with sauce a couple of times.

Pepper Jack Stuffed Peppers

I hate I did not take more pictures but here is my "Bacon Wrapped" entry!
I few weeks ago I followed Bobs "Bacon Made Easy" thread and brought home the bacon. I made a black pepper slab and a brown sugar slab.

I made these peppers out of my home made, thick cut black pepper crusted bacon!

I simply cut the peppers in half and removed the seeds/insides and stuff with cheese.

I took my long pieces of bacon and cut them in half to make them shorter and then I cut those halfs long wise to make thinner strips.
Have you ever eaten something that took multiple bites to eat but the entire topping (in this case bacon) came off on the first bite?
My theory is if you wrap with two thin strips you get a piece of bacon with both bites.


I setup my kettle to cook indirect. Grill indirect for about 20 mins until the bacon is cooked and the cheese starts to brown.

Bacon Wrapped Chicken Thighs

A friend came into town recently and had seen pictures of these and asked me to make them for him. I was more the happy to oblige. The thighs are wrapped in bacon with cheese, onion, jalapeno. I dusted them with Cimarron Docs, and Birds and Bones. I smoked them with maple and hickory.

My entry: I shall call these: Freedom Wings. I took Not Your Fathers Rootbeer (hard rootbeer) and worchestershire sauce and marinated it for about 6 hours. Then I rubbed the drums with the spicy portion or my rub. Next I wrapped each one with 2 pieces of bacon and rubbed with the sweet part of my rub. I smoked then for 3 hours at 265 with apple wood chunks and Jack Daniels wood chips.
