    Talking GrillFest3: MEAT IS GORGEOUS!

    about a week or so before GF3, I came upon a video bout grilling a big ol' 3bone pork chop...
    the dang thing looked AWESOME and I thought, I could do that.
    So I did.



    bought TWO THREE BONE PORK RIB CHOPS from my favourite pork suppler, Harry Hansen's Meat Service.





    but, I only grilled one...
    drizzled EVOO all over it, seasoned it with Kosher salt, pepper and fresh ground fennel.
    Yeah, smells like licorice fresh, but once it's cooked on the meat, the flavour is remarkable!
    Got the grill SUPER HOT.... but only one side.
    Seared all sides of the pork roast directly over the intense heat...



    meanwhile, I had another Weber fired up for the sides (everything was cooked on Weber Grills)



    back to more searing....





    once I figured I got the thing all seared-up, I set it on the cooler side of the grill to cook through...




    looking for an internal temp of 125F. Yes, 125 degrees.

    checking the other grill, everything looks to be on schedule...





    moved some stuff around to make room for a few halved garden fresh Pattypans





    that didn't take too long...



    once the pork hit my desired temp, it was removed from the heat to rest...
    and it did for about 20 minutes.
    I then did slice the bones off the roast and sliced the pork chop up to feed an army.

    The Pork was Perfect!
    Crusty on the outsides, Juicy And Tender on the insides... Yeah Baby!! I'm Doin' This Gig Again!

    Wow, Jim well done! You're right, that is one gorgeous piece of meat. Your final plate looks fantastic!

    I can't wait to see the pics Jim. I had some bad experiences with pork chops before I knew WTH I was doing (and before the influence of this site & members), it's probably time to give it another chance.
