Chopped BBQ on a Cracker Appetizer

Simple as can be...make an open-face BBQ sandwich on a cracker instead of on a bun.

Start with Ritz Crackers. Chop any barbecued meat finely—pork, brisket, or chicken—and mix with your favorite barbecue sauce. Use enough sauce so the meat holds together on the cracker without being sloppy. Heat gently in the microwave or on the stovetop.

Put a small amount of meat on each cracker and top with a bread & butter pickle chip. If using chopped pork, put cole slaw on top, just like on a real sandwich.
