As you may well be aware the PM show got a lot of competitors switching over to Wagyu or Prime briskets. I'm still on the fence about the whole matter. What are your thoughts or preferences when it comes to comp briskets?

Having cooked against and talked to many teams including the top names on the national circuit, I can tell you a BIG secret. Many top teams win with Wagyu/Kobe and many top teams win with CAB/Select/Choice/Prime brisket.
I've cooked them all in every way imaginable and unimaginable and can debate the merits/demerits the next 3 hours. Bottom line: it's still the cook first, meat second.
