    Direct grilled ribs Rendezvous inspired

    I've done the direct heat rib cook on the WSM before but not with the Rendezvous rub. Used the Amazing Ribs.com version of the rub and his vinegar based mop. No sugar or salt in either. WSM had some leftover coals in the bottom so I dumped one full hot chimney of Kingsford Blue and planned on a hot cook. Left all the vents open and surprisingly it wanted to stay around 275-290 for most of the cook. Last time I did this I struggled to keep it around 300-325. Started at 6:00 and was thinking I'd be through around 7:30 but ended up taking them off at 8:00. Mopped and flipped every 20-30 minutes.

    One hour in


    Hour and a half in


    Broke Rendezvous tradition and glazed them and didn't apply dry seasoning at the end.


    Definately had more of a grilled flavor due to the fat dripping on the coals. I noticed that they were not as filling as my normal indirect ribs. Also leftovers today for lunch were almost as good as last night.

    Those ribs turned out great! I'm surprised you didn't get above 290 pitt temp without the defuser. I'm gonna try that cook

    Ribs look great....I have never been to the Rendevous but I use their dry rub each time I do ribs or pork butts. my buddy sends that stuff up here all the time....the rub and the sauce.

    love the look, I bet they tasted even better.

    One of these days I intend to try the full Rendezvous rib thing. The method intrigues me.
