Hi all,
Im planning on smoking some baby back ribs next weekend. I was going to re-use a recipe I had used once before - but I was told the ribs tasted a bit too " vinegary ".
I previously had put my baby back ribs in a large container with several cups of apple juice ( 6-7 ) and about 2 cups of white vinegar. ( Prior to that I had prepped and trimmed the ribs ). I had let the ribs marinate for about 2 hours; cleaned them, dried them, rubbed them and then put them on my smoker. They tasted pretty good but they had a vinegary taste to them.
Can anyone suggest a simple marinade with possibly apple juice as a base that I can marinate my ribs for a few hours or possibly overnight? I want to avoid the vinegar taste - perhaps I used too much vinegar? Im looking for something that will loosen up the meat a bit; and maybe some citrus notes could be added too.
Any suggestions, recipes, opinions please?
thanks everyone.
