Smoke Day - Midnight Brisket

Here is my smoke day post. I was a few days late, but wanted to share this here. It was my first midnight brisket, but definitely not my last!

Used the minion method over lump charcoal, two chunks each Apple and red Oak.







Very good day! Fought temps a little, but nothing we couldn't handle. Also got some early morning help watching the birds.

Brisket looks great! What did you season it with?

Thanks! I used 1 Tbs McCormick Perfect Pinch Steak Seasoning (Salt, garlic, onion, paprika, celery seed and pepper), 1 Tbs Chili Powder, and 2 Tbs Brown Sugar. It is my goto rub and goes good on everything!
