Black Pepper/ Garlic Marinade

I bought some store made shish kabobs tonight that were marinated in a black pepper garlic marinade it was a thick almost black color and had a nice black pepper flavor with a great garlic taste. I asked the meat dept. mgr. for the recipe and he stated that they they buy it packaged. When I asked him if I could by some was told Nope, which sucks because I don't want to pay $7.99lb for chicken and $8.99lb for beef when I can make my own if I had that marinade.

So am looking to see if any one has a marinade recipe that maybe fit what I am looking for

If it was commercial it was likely soy based. Start with that. Add a bit of red vinegar and lemon to taste. Add plenty of back pepper and both fresh pressed and powdered or granulated garlic (not garlic salt). It likely had corn syrup in it (probably HFCS). You can use that or simply add a little sugar. For viscosity, carefully whisk in xanthan or guar gum or a combo.
