Here's our Tomato Pie Recipe.

Tomato Pie

1"9"fresh baked pie crust
1 6 oz package of fresh baby spinach
1 pound of bacon, diced
1/2 medium onion, diced
5 cloves of garlic, minced
1 1/2 pound of ripe tomatoes, seeded and diced
1 1/4 cup Mayo
1 generous teaspoon of Italian spice
1/4 cup shredded Mozzarella
1/4 cup Parmesan
1/4 cup shredded Emmenthal, Gruyere, or cheese of your choice (if cooked in the oven I think some smoked cheese would be good)


Fry the bacon, then removed bacon from the grease, sauté the onions and garlic, them wilt the spinach in with the onions and garlic .

Place the spinach, onion and garlic in the pie crust, then the bacon, after that cover with the diced tomatoes.

Mix the Mayo, Italian spice and cheese together and spread over the tomatoes making sure to bring the topping to the crust like meringue.

Baked in a 350° oven or WSM for 55 minutes until the top is golden brown.

A GREAT variation on quiche! I might substitute 1C heavy cream mixed with 2 beaten eggs, however, for the mayo.
