Pork Loin - Bacon is good, more bacon is better...

I had a pork loin in the freezer for some time and was worried about it being dry, so I wrapped it in bacon. I also seasoned it defensively (so I could make chili out of it if it did not work out).



On the grill at 250-275, used water in the basin and used a foil pan to catch the drippings (the chicken is for chicken salad for a hike the next day). I used the standard method and a chunk of maple.



Once it was at about 140, I put the top grate over the coals for a final sear (grate temp was about 100+ degrees hotter just from doing this...plus the WSM looks like some weird space pod!



Done and resting.



Plated with salad and some crock pot macaroni and cheese.



Tasted great and very moist!
