Cedar Planked Chicken and Parmesan Herbed Potatoes

Ingredients for tonight’s dinner:

Thighs and legs marinated in Bruschetta Italian dressing, seasoned with garlic pepper and
Italian seasoning.


Parmesan herb potatoes are being made following this recipe:

2 large baking potatoes pre-baked half way or par-boil.
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. Italian seasoning
3 large garlic cloves, minced
1/4 cup chopped parsley
1/4 cup fresh grated Parmesan cheese
2 tbs. EVOO
Cut potatoes about 1/8 to 1/4 inch. Pour in the EVOO, and the seasonings. Mix together gently.
Align on cedar plank and cook for about 20 minutes at 350.

Plank was heated up and chicken put on the Performer, using Stubbs charcoal.


Chicken moved to the indirect side and herbed potatoes onto the heated plank.


Chicken and potatoes are done.

Everything was absolutely delicious! Best chicken yet as it was extremely juicy, tender and the
skin didn’t fall off. Potatoes were really flavorful with just the right amount of seasoning. The
cedar planks did not over smoke either, they just added a light touch of cedar to the food.
