Smoke Day in NC

Beautiful spring day in the Carolinas yesterday and a great day for smoking! Started early with a full ring of briqs along with 2 chunks of apple and one of hickory. 5.5 lb butt seasoned with Bad Byron's and on the smoker at 0700.

No action shots...took advantage of the excellent WSM temp control and was out most of the day while the smoker did it's thing...beans were added under the butt after she had been on about 8 hours - here they are after coming off the smoker. These are Bush's Homestyle with a squirt of yellow mustard, ketchup, maple syrup and Blues Hog Original, plus the dripings from the pork.

The finished butt pulled - it was a tad under done in spots, but flavor was excellent. Smoked for 10.5 hours between 225 and 250:

No plates...we were starving! Day ended with marshmallows and relaxation at the firepit!
