Good Morning tvwbb family
OK up at 3am......arrgggg, light chimney, set up water pan, pour lit coals over unlit, hickory/apple wood, pour hot water into pan, place grill. Pre heat performer, clean grill, place brisket, set ET732 probes. Adjust heat.
Grate is low 230* meat 75*.
Starting blog, having coffee, will jot down some notes as it's raining and 41* out.
Life is good!
Making ice cream mix for the White Mountain Ice Cream Maker next. (Strawberry)

OK brisket has been on 8 hours now, grate has been between 225 -250* internal is about 150* I think I'm ok maybe a few more hours?

I love my WM freezer, just picked fresh strawberries yesterday for this summers ice cream!
