Apple Oven Cake

This is a quick, easy recipe from Sunset magazine, January 2013. It's attributed to reader Peter Zensius of San Francisco. It's not too sweet and perfect for a dessert or special breakfast. It's more of a thin pancake than an actual cake.

It's good to get everything measured out in advance, as it all comes together very quickly to go into the oven.

APPLE OVEN CAKE
Serves 6, 30 minutes

3 TBSP butter
1/4 cup packed light brown sugar
1/8 tsp cinnamon
1 sweet apple, e.g. Fuji
3 large eggs
1/4 tsp salt
1/2 cup milk
1/2 cup flour
1 TBSP lemon juice
Powdered sugar for sifting over the cake

Preheat oven to 425*F.

Peel and core the apple. Cut in half, then cut into slices 3/16" to 1/4" thick.

Melt butter in 12-inch ovenproof skillet (cast iron, if you've got it) over high heat. Add brown sugar and cinnamon, stirring to combine and melt. Add apple and cook until starting to soften, about 3 minutes.

While the apples cook...in a blender, blend together eggs, salt, flour, and milk until smooth. Pour egg mixture into pan and bake until puffed and brown, about 15 minutes.

After baking, sprinkle with juice, then sift powdered sugar over the cake using a fine strainer.
