It's the sound of my tummy growling, after seeing another one of Mr Lampe's outstanding chuck-eye cooks.

Superb looking plate Jim. What does the napoles taste like? I've seen em in the stores here, but not sure if I'd like them. Great photos, great looking meal.
 
I'm also curious about the nopales. I often eat the pickled napolitos strips but had not thought of grilling the real thing.

Do you have to do any skinning or prep for the napoles?
