I joined just a few days before the switch to vB. My smoker arrived while the forums were closed so I just wanted to let you all know about my first two experiences on the 18.5 WSM.

First was Saturday afternoon, smoked 6 chicken leg quarters for 2 hours. Held at 250 with no water, no problems. Last 5 minutes I cranked the vents wide open and it shot up to 350 and got a decent crisp on the skin.

Then last night I put on two 8 lb boston butts around 11. By 12:15 I was confident enough I had the temp dialed in just right, I went to bed. 7 hours later I woke up, and amazingly was still sitting at 245 where I left it. Needless to say, I'm absolutely in love with the WSM. Fed a bunch of people this afternoon, now they're already putting in requests next time I fire it up to give em' a call.
