It’s nice to hear from a fellow Californian. Thanks for writing.

You know, if you ask me that question tomorrow, I’ll probably give you a different answer than today. Right now, though, I’ll say the Smoked Chicken on page 168. This is the kind of recipes that will make anyone love charcoal. It calls for only 5 ingredients: a chicken, butter, salt, pepper, and wood chips, but MAN…when that smoke surrounds the salt-cured bird, it transforms ordinary chicken meat into something unspeakably good. I groan with pleasure every time I eat that chicken.

Please give it a try and don’t skip the salt-curing.
