I thought I would try this recipie tonight since I just got back with fresh salmon from a fishing trip this weekend.
The salmon was very sweet after the cook I loved the flavor. Also I used alder wood and cooked at 200-225 for 3hrs this recipe keep the salmon very moist.

Nice cook Rick. That raw salmon was pretty nice looking. I'll bet it doesn't get any fresher than that. I'd probably wind up eating half of it before it even made it to the smoker!

Kevin we were out for approx 4 hr and caught about 88lbs was the meat total. Usually its over 100lbs.

As for the thermometer I use the suppled wire holder with the Maverek however I have bent it in such a way that I am approx 4-5 " from the heat of the WSM. also If I set it so the bend in the wire touches the handle on the top grate it wont fall when I take the lid off to check the progress.
