Garlic-free brisket rub

I need a good rub for a brisket with no garlic in it for a guest with allergies.

If you're feeling adventurous you could try this one --scroll down two posts to the modified version. Just skip the garlic.

For a sauce you can try this replacing the garlic with an equivalent of minced shallot.

Note that I do not use salt in rubs. I salt the meat first (somewhat generously for a brisket--you can always add more later, if you're unsure) and allow the meat to sit while I'm making the rub. When the meat is nice and moist looking apply the rub over the salt. (I do not apply rub on the fatcap as a) I cook fatcap down for the entire cook and b) I trim the cap off prior to slicing for serving.

In April I posted this recipe:
No Onion, No Garlic Rub

1/4 cup kosher salt
1/4 cup black pepper
1/4 cup paprika
2 T sugar
2 T brown sugar
2 T ground cumin
2 T chili powder
1 T cayenne

I usually cut the salt in half. Enjoy!

from 'How to cook meat', recipe name is mine not theirs.
