LIMONCELLO COLLINS, FLOATAWAY CAFE

Chef-owner Annie Quatrano is always happy to share. This refreshing summer drink tastes like lemonade with a kick. It begins with simple syrup infused with fresh thyme, then vodka is added and limoncello. It’s topped with a splash of sparkling water for a little effervescence. Add simple syrup to your preferred sweetness.

Hands on time: 15 minutes
Total time: 24 hours and 15 minutes
Serves: 1


2 ounces limoncello
2 ounces fresh lemon juice
1 to 1 1/2 ounces Thyme Simple Syrup (recipe follows)
1/2 ounce Stolichnaya or other premium vodka
1 splash sparkling water or soda water

GARNISH:
1 sprig fresh lemon thyme
1 lemon slice, seeded

FOR THYME SIMPLE SYRUP:
1 cup water
1 cup granulated sugar
5 to 6 sprigs lemon or plain thyme


1. TO PREPARE THE SIMPLE SYRUP: In a saucepan, heat water, sugar and thyme until sugar dissolves.
Set aside in order for thyme to infuse the liquid, 1 or more days.

2. TO PREPARE THE LIMONCELLO COLLINS: In a shaker, combine limoncello, lemon juice, generous 1 ounce simple syrup and vodka.
SHAKE WITH ICE and pour into a tall glass.
TASTE AND ADD SIMPLE SYRUP, if desired.
TOP WITH a splash of sparkling water.
GARNISH with a sprig of thyme and lemon slice.

3. REFRIGERATE REMAINING SIMPLE SYRUP to use later.
