I don't if you have looked around this site much but some of these guys make some fantastic dishes.

If you were going make a meal that you wanted to impress your guests. What would it be and how would you prepare it. Perhaps one of us will give it try and give credits to you obviously.

That's a great question, Bill. Yes, I have looked around the sight and I'm blown away by the impressive ideas. If I wanted to wow my guests these days, I'd show them what can be done with the magically delicious effects of smoke. I'd impress them with a whole range of techniques and recipes that use smoke in subtle and not-so-subtle ways. Here is a sample menu from my new book.

Cedar-Planked Brie with Cherry Chutney and Toasted Almonds
Barbecued Oysters with Tomato-Horseradish Sauce
Oak-Roasted Leg of Lamb with Hazelnut Gremolata served with Grill-Roasted Artichokes with Smoked Garlic Aioli
Warm Potato and Bacon Salad with Whole-Grain Mustard Dressing

Jamie You are setting the bar extremely high but I am sure one of these guys will try it heck it might even be me.
