This has been a lot of fun. I had a slow week so the timing was perfect.
You may find that much of my theory doesn't exactly jive with the internet same old. Needless to say I'm a big fan of the internet, but I hate that some pigeon hole ideas become gospel. There is so much to learn, but it takes time and experimenting. That's the fun of it. I know many great BBQ cooks, and some of us do things very differently than each other, but we can all cook great food.
BBQ is way more than just the food too. The culture and history are to be taken in and enjoyed as much as the food.
