Smoked Fish Spread


 
Something to do with that smoked salmon...

Ingredients:
3 scallions, cut into 3" pieces
1/4 cup lowfat sour cream
1/4 cup nonfat or lowfat ricotta cheese
1 tablespoon store bought bottled horseradish
1 teaspoon dijon mustard
1 teaspoon soy sauce
2 teaspoons lemon juice
1/2 pound smoked fish, skin and bones removed
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground pepper

Instructions:

Mince the scallions in a food processor. Remove from the bowl and set aside.

Puree the sour cream, ricotta cheese, horseradish, Dijon mustard, soy sauce and lemon juice until smooth. Pulse in the fish, salt and pepper until well mixed but not smooth. Stir in the scallions. Serve dip with plain crackers.
