Biggest mistakes made by would be grill masters?

I think too many people leave the lid off for too long. So much of charcoal grilling is about controlling the fire. With the lid off, the fire can run to either extreme really quickly --- either roaring hot or almost completely extinguished. If the lid is on and you understand when/how to adjust the vents, you master the fire and the food.
