Turkey gravy

Just wondering if any one has had any luck making turkey gravy from the drippings that fall into the water pan?
I was planning on running the WSM Hot (325-350) and not using any smoke wood or water in the pan.
I might put a cup or two of water in the pan so the drippings won't burn. Then take the drippings to the stove top and make gravy the traditional way.
Think it will work?

I would put foil in the waterpan but hold it up off the bottom of the pan. This is to keep the drippings from burning and you won't have to mix the water in with them.
Day off and BBQ! Life is good.

Jim's method sounds great, especially with turkey. The less water the better with poultry. Dry means better skin, which will not only have a better texture, but a better appearance.
