MUDD'S BBQ CHILI
Ingredients:
6-8 cups smoked pulled pork,mixed with 1/4 cup of cider vinegar and cup of(Your)favorite bbq sauce. (OPTIONAL)
2-1/2 lbs ground beef
oil
3 cloves minced garlic
2 large sweet onions chopped
3 green peppers chopped
12 carrotts diced
1 qt Budweiser beer
3 tbsps Tobasco
1 tsp ea: cayenne, white and black pepper
1 tbsp cummin1 tsp ea: garlic powder, onion powder, paprika, crushed red pepper flakes
1 tbsp thyme
3 tbsps chili powder
1/4 cup turbanodo sugar (@health food store)
1/4 cup regular sugar
2 40-ounce Joan of Arc light red kidney beans w/juice
4 15-ounce Joan of Arc spicy chili beans
1 14-ounce stewed tomatoes
1 10-ounce diced tomatos and green chilis
2 28-ounce crushed tomatoes
Directions:
Brown ground beef in oil. Add carrots, onions, garlic and green peppers and cook until lightly tender, adding more oil if needed. Add all the spices and sugar. Cook and stir continuosly until thoroghly mixed.(2or3minutes). Add beer and bring to a boil, stir and cook 5 to 8 minutes. Then add the rest of the Ingredients, including your smoked pork and bbq sauce (optional). Turn down heat and Simmer for 2 hours, stirring every 5-10 minutes. The stirring is VERY IMPORTANT, as you do not want to burn the chili. This recipe is very time consuming, but well worth it. I have been perfecting it for the past 10 years and findly ended up with this. I think you will be very satisfied with this recipe. You should use at least a 20 quart stock pot. Freezes well and makes approx. 10qts.
