Who is smoking on the mini WSM?

I only had a single rack of St. Louis style spares so the mini got the call today. Royal Oak lump with some pecan chunks is the fuel.

It is a windy April Fools day with frequent snow showers.

Using the Ag tub for a wind shelter the Mini is chunking along at 244. Now what do I eat while I'm waiting?

It's funny, but the Mini WSM, which is thrown together by hobbyists, works a lot better than many factory smokers.

(Yeah, I'm looking at you Brinkman)

Giant pork-chops may be my next Mini adventure.

I wouldn't trade my mini for 3x what I have invested in it! I love the little smoker! Built one for my Bro in law, He was able to smoke 3 racks of BB's (rolled) on his mini.

I have 5 pounds of wings smoking on my miniWSM right now. Kinda dumb since they won't be ready until 9:30 tonight but...

They were brined in a mix of salt, sugar, water and a some apple juice. Bad Byrons butt rub dusted and now they are enveloped in smokey goodness.

These tasted even better for a snack the next day with a sweet Asian chile/garlic sauce.

It works great! I guess threads like this belong over in the photo gallery so I'll let this one die off.
 
wow that looks good...I do love my little mini smoker.I modded a Brinkman and used it a couple of years.After I made my mini smoker I gave my Brinkman away lol.
