Cleaning out the ashes was MUCH easier, too! ;)

    "Gambit-II" Trial Run

I wanted to post some photos of my newest toy. I originally learned to BBQ low-n-slow using a Weber OTG kettle and a Cajun Bandit Stacker. I installed a 4-hole damper from a WSM on it for air control, a 16" clay saucer as a heat deflector and used Maverick wireless thermometers. It wasn't...

    Smokey Joe Platinum issues

I have a SJP, and 10 years back came across a "fix" to the airflow issue. I took an empty cat food can, used a bottle opener to punch holes, and put it on top of the lower vents. It fixed the airflow problem for me. Still, I think the grate is far too close to the coal bed. I almost never...

Turning a Performer Deluxe into a smoker

Turning a Performer Deluxe into a smoker

I have one, a WSM. And as I have written, it is getting very hard to clean out the ashes. My knees don't like to bend any more. As the Rolling Stone song goes, "What a drag it is getting old." ;)

Turning a Performer Deluxe into a smoker

And this is my point exactly. I do not want to use the Performer as a grill at all. I want to tweak it into a (permanent) smoker to supplement (if not replace) my WSM. Cleaning out the ashes from the WSM is hard on my old knees, but the ash catcher on the OTG and Performer is easier to...

Turning a Performer Deluxe into a smoker

I use a chimney for lighting the coals, so the gas ignition has no value. Leaving the gas ignition leaves an air gap around the ignition tube and defeats using an automatic temp control for controlling the temperature. I want to use an ATC like a Pitmaster IQ or a DigiQ; I suspect that I can...

Turning a Performer Deluxe into a smoker

The guitar is a PRS McCarty 594 Singlecut SE. I love the tone, but I can't play (arthritis in the left hand.) I also play keyboards and drums (multiple vintage drum sets.) Keyboard I'm moving towards music with simpler bass lines. For drums, I'm still good, I use leather gloves for grip...

Turning a Performer Deluxe into a smoker

This is probably a case of being bored... I have an opportunity to buy a Weber Performer Deluxe new in box locally (trading a guitar for it.) But I do not have a need for the Deluxe; in particular I do not want the gas ignition. On the other hand, as I'm getting older, cleaning out the...

I FINALLY got a Chuckie Right!

After wrapping tightly in two layers of foil, I let it run until it hit an IT of 200 degrees. I pulled the roast from the smoker and let it rest (towel wrapped) in a cooler for 2 hours. I didn't know what to expect; worst case the GF and I would go out to eat. But while the roast rested, I...

I FINALLY got a Chuckie Right!

I'm fairly good with BBQ, normally I run pork (shoulder, babyback ribs) and/or chicken thighs (cupcake style.) My GF loves brisket, and lately I've gotten decent results with brisket flats. But chuck roast has been my nemesis. Always tough, chewy, dried out. I've tried different temps...

    Online Source for Smoke Wood?

I used Fruita Wood for years and I was always pleased with their products. My favorite was the Georgia Peach.

    Cajun Bandit substitute

It looks like Cajun Bandit will not be getting any stackers or rotisserie rings anytime soon. I've been looking for something similar so I can do some simple smoking at the GF's house. Has anybody tried one of these: https://www.amazon.com/dp/B09N9B3B3X/?tag=tvwb-20 Thanks!

    Do you name your grills?

My first smoker rig was a Cajun Bandit on my OTG, the kids named it "Gambit" (the X-man character, a thief from New Orleans) My WSM is "Winston" (Winston Churchill... short, fat, wears black and smokes a lot) My Akorn is "Rocky" (Rocky the Flying Squirrel from Bullwinkle)

    Kamado question

If you buy it, the cooking grate will probably be rusted. I replaced mine, and this is the cooking grate I use: https://www.amazon.com/dp/B075T3BL29/?tag=TVWB-20

    Kamado question

I've cooked a lot on a friend's BGE and besides my Weber stuff I have a Char-Griller Akorn. They're very different to cook with, but I like them. The positives about them: They're insulated so weather isn't as much an impact. And to be honest, the insulation helps the cooking environment as...

Grill Mat Under WSM to Protect Wood Deck?

I use a fiberglass welding blanket from Amazon. It's 6 feet by 6 feet in size and I can drape it over the deck and railing. Between cooks it's rolled up and in a storage box.
