    temp with lots of meat...

    I was just wondering if anybody lets their cooker overshoot the desired cooking temperature during the warm up (before meat is placed in) to compensate for the amount of heat that the meat will absorb initially? Example ~ Cooking four 9# butts at 300*. Would you let the cooker heat to say 350...

    All you performenr users...

    Hey folks, I have a 22 wsm and love it, and now that I am hooked on charcoal cooking I will never go back to gas. I would really like to get the performer with the autolight feature. Thoughts? Also, I was wondering if you guys ever do any smoking or LNS on your performers for smaller cooks? Thanks!

    Tempurature questions..

    Hello all. Sorry for the rambling post... I am trying to understand the fine art of temperature control. Please correct me if I am wrong. From what I have read on the forum it seems that if the minion method is used, the amount of unlit coals does not affect the temp as much as the overall burn...
