    Easter Lamb Chops

I usually do a leg of lamb for Easter, but this year it was just three of us. Picked up some lamb chops that were on sale. Marinated them overnight in a homemade marinade of EVOO, Dijon Mustard, Garlic, Onion, Pepper and White Wine. It was rainy, so it was under the umbrella... Brand new...

    BBQ Chicken & Lampe Potatoes

After seeing Jim's post with the potato galette, I had to give it a try. I'm glad I read through the recipe he linked because I was planning to use a stainless sauté pan and the author explained it didn't really work. My non-stick pans (T-Fal) are only oven proof to 350, so I could not use...

Picked up a whole pork loin on sale. Lopped off two pieces about 2.5 lbs. each for Canadian Bacon. Remaining 4+ lbs. went into the freezer for a future meal. Cured them for a week. Morton's Tender Quick + Brown Sugar. One got spiked with some Makers Mark Bourbon, the other got Maple Syrup...

Honey Sesame Shrimp & Bok Choy

The shrimp recipe is from Steven Raichlen's, The Barbecue Bible. Marinated the shrimp for about an hour and then reduced the marinade. The shrimp was brushed with the reduced marinade as it grilled. The Bok Choy cabbage was nuked for a couple of minutes then tossed with Thai Sweet Chili and...

    Ribs and cornbread, yum!

It was hot on Sunday, but at least it was a little cooler than Saturday. WSM fired up under the umbrella for shade. Couple of St. Louis style racks. Rubbed with a homemade mix... It was mixed up a month or two ago and I forget whats in it. Nothing exotic. Apple wood for smoke. Ribs...

    First time Flat Irons

I received a gift of some Flat Irons along with some other goodies from Omaha Steaks, never had anything from there before. One of boxes was 4 - 7oz Flat Irons. Defrosted three of them for dinner. They seemed a little skimpy, but nicely marbled. Salted them and let sit for about 45 mins...

Picked up some nice looking veal chops. I don't buy these often, but it was really nice out so I couldn't resist. Sorry some of the pics are little off focus. I've got to start using my good camera, these are all iPhone pics. Coated in EVOO, fresh rosemary, fresh thyme (both from our garden)...

Need a packer source in North NJ

Hi, Lately I can only find over priced flats at costco or very expensive "prime" briskets at my butcher. My butcher is not interested in getting me a full packer. He keeps saying he'll see what he can get. Might be time to change butchers. I'm located near Morristown, NJ. Does anybody...

First Smoke in the torrential rain

Hi all, Today was my first smoke in the 22 WSM. Not pretty day to be doing this. Did it under a market Umbrella. Beer can chickens, high heat. Royal Oak lump. Full open, no water in the pan. Lit the standard method. Added a full chimney of unlit, maybe a little more to the first lit batch...
