    Rib-eye Cap Steaks for Dinner

My dear wife picked out some rib-eye cap steaks at Costco yesterday. I was legally obligated to cook them tonight for dinner. Cooked over Kingsford Pro on the Performer. I usually reverse sear these things, but lost my mind tonight and front seared them, then cooked up indirect to the right temp...

    Pork Belly for Dinner

I pulled a section of pork belly out of the freezer a couple of days ago. Marinated it today with some soy sauce, lime juice and little sugar (didn't have honey). The organic Kikoman is my preferred general soy sauce right now. It has a more subtle, fermented, wheaty flavor than regular...

    Beef Back Ribs

I picked up some beef back ribs at Costco the other day. Wow, prices have adjusted down to a pretty reasonable level again. This was a 4.8 pound pack for $20 and change. My wife is out of town, so my son and I had these for an early dinner today. I used a supremely lazy rub of Montreal Steak...

New (to me) Zero-Sugar BBQ Sauce

I was browsing down the bottled sauce aisle at our local Costco, and saw a new to me Zero Sugar Cali Gold BBQ Sauce from Kinder's. I like their spice blends quite a bit, so why not? Trying to find a good low-sugar sauce is kind of tough. I do make my own occasionally, but like many things, it...

    Turkey Time!

We had dinner with my extended family on Thanksgiving, and I worked yesterday, so today was the day for our own little Thanksgiving dinner. We had a 14.5lb Buterball, and even though it is already injected with stuff, I did a scaled back mini-dry brine for 2 days in the fridge. While I was...

Grilled Tri-Tip and Dill Pickle Salad

For this meal, we were all in on items purchased at Costco recently. Prime tri-tip, which I like to grill to just past medium rare (vs. rare for choice, etc). Turned out perfect with a nice reverse sear. The dill pickle salad was a salad kit which caught my eye at Costco. It's kind of...

    Ribeye Tomahawk

Grilled a prime ribeye tomahawk steak for dinner last night. Wife requested it for anniversary dinner (31 years!). Not pictured: blue cheese and sliced pear salad.

Happy Father's Day to Me - Day 2

After grilling a nice tomahawk ribeye on Sunday https://tvwbb.com/threads/happy-fathers-day-to-me.91634/#post-1045139, I cooked up a nice slab of St. Louis cut ribs (trimmed down from a rack of spares). This ended up being probably the best rack of ribs I have cooked to date. Just did a...

    Happy Father's Day to Me

Picked up some nice prime ribeye tomahawks at Costco, came as a 2 pack. One was vacuum packed for the freezer. After a nice hike in the mountains, I grilled the other. Not pictured, grilled romaine lettuce heads and asparagus.

Late to post Thanksgiving Turkey Pics

I cooked our turkey on the WSM again this year. Honestly, I have been cooking it the last several years either on the Performer or more recently the WSM, and my family won't let me cook it any other way. Fine with me because it nearly foolproof, and turns out fantastic every time. I didn't have...

    First Brisket Cook

Posting this today, but did this cook yesterday for WSM Smoke Day. I cooked my first brisket Friday night/Saturday morning. Like many "first times", didn't need to be as nervous about it as I was. Started with a nice prime packer from Costco. Bought it back in February when they had a sale...

    Tri-Tip on the Performer

Picked up a nice prime tri-tip over the past weekend, and cooked it on the Performer Sunday. Served up with some sautéed mushrooms, asparagus, and brussels sprouts. Deeeeelicious!

    Costco Haul on pork butt

Our local Costco had packs of boneless pork butts for a $1.89/pound, so I went to pick up a pack. Apparently they are also taking $4.50 off per pack right now, so I bought 2 packs. 28 pounds total of wonderful pork butts. After splitting a couple of the roasts in half, I vacuum sealed each...

    Thanksgiving Success

Had a really nice Thanksgiving Day at home with just DLSW and son (and cat). Not many pictures, but fantastic meal, good company, and plenty of 'thankfulness'. Tuesday: 12lb, fresh turkey purchased at Costco. Spatchcock and dry brine the turkey. My spatchcock skills are basic at best, so...

    Charred Hatch Chiles

My local grocery store finally had some Hatch chiles in stock. I bought all they had out, which was only a few pounds. The produce manager said they will get more next week. Roasting on the Performer, steaming in a paper bag. It's hard to beat the smell of freshly roasted chiles steaming in...

    Pork Butt on WSM 18.5"

Cooked a pork butt on the WSM yesterday. Starting weight was about 11lb, and I did not trim anything off. Dry brined overnight, then rubbed with MMD. On the WSM about 9:15a (lazy morning), and it was an almost 12 hour on the dot cook; pulled it off at about 9:15p. I had a medical appointment at...

Late Entry for Smoke Day Cook

Late to post, but I did cook this yesterday on Smoke Day. Another successfull pork butt on the WSM. I have had the WSM for a few weeks now, and all I have cooked on it are pork butts while I learn the nuances of it. Turns out great every time.

Welcome to the Family, New (to me) 18" WSM

The Social Worker who works for one of my teams at our hospital let me know recently that her husband wanted to sell his 18" WSM. He bought a PBC a couple years ago, and likes cooking with it better than the WSM. Their loss, my gain. For a very reasonable price I brought it home today. Truth be...

Lodge Skillet Needs a Little Help

I have a Lodge skillet that needs a little help. The cooking surface has become pretty rough, and for lack of a better description, 'chunky'. See attached photo. I'm thinking of just stripping it down and re-seasoning. Is there something else I might try first?

    Pork Butt on the Performer

Scored a nice sized pork butt at Lucky when we were picking up some basics. Cooked it up on the Performer using the snake method. I gathered the coals up towards the end, and the pork butt finished just as the coals were dying out. Perfect timing.
