    Getting closer

Had an IBCA close to home yesterday. Loaded the trailer and headed out from work a little early. Didn't get a lot of pics as most boxes start looking the same. Got to cook next to a couple of great guys including the guy that won GC. My chicken let me down. As I was prepping one half just...

    SRF shoulder

Last year my FIL sent me a whole shoulder from SRF. Being as I don't know/like enough people to cook this for, I figured I'd fire it up now that they are here. For a month. An entire month. All. Friggin. Month. Anyway, it's on the pellet pooper for an overnight ride at about 210 and I'll check...

    Broccoli beef

Instead of the usual taco, I made broccoli beef with some of my leftover comp brisket trimmings. Came out great. Wife came home from her pottery show and was happily surprised I had dinner covered for the evening. And I'm happily surprised she sold enough pottery to buy me some more srf...

    Victoria TX IBCA

Not a whole lot to say. Just some photos and a little story. A little rain, a lot of wind, jambo didn't care. There were a lot of big time teams at this event and I got my a** whipped. 73 teams and I finished in the 40's. A little frustrating as I don't understand how judges at the same table...

    Beeville CBA

It's been a couple months. Had some comps get cancelled so was nice to get back to it. Chilly temps gave some challenges and I made a couple bonehead mistakes so I probably did better than I should have. 27 teams. 22nd chicken, 15th ribs and 4th brisket for 11th overall. I dried the chicken out...

    Pulled pork using new seasoning

So a few things came together for this one. An almost eight pound butt that my wife picked up on sale from wild fork a few months back, a new seasoning I got for free from BPS, and my desire to use one of the WSM's. I realized last week that it has been darn close to a year since I have used...

    Turk-chetta

We went for something different this year. A turk-chetta ala Kenji. It's just the wife and I, so it was fun to try something new. It came out great. If we do it again I will pull a little earlier. Served with stuffing muffins, cranberries and Brussels sprouts with delicata squash. Cheers y'all.

    Sinton TX IBCA

Rolled the new Jambo up the road for a comp yesterday. Not only the first comp on this new pit, but the first ever cook on it. No surprises as it runs just the same as my smaller pit. Having the trailer to use was amazing and as we keep adding things it will only get better. So, 28 teams. 6th...

    My new rig

A few years ago I was bitten by the comp bbq bug. I competed a little with my father in law when I still lived in CA and loved every minute. Now being in Texas and without my old teammate, I'm going for it. I've decided it's my mid-life crisis, and my wife is super supportive. Last year I...

    Ingleside TX IBCA

Cooked in an IBCA yesterday and it's time to change it up. These judges do not like my kcbs style ribs and brisket. I was super happy with both but it didn't hit. Didn't even taste my chicken but it was good enough for 5th. So next weekend it's back to the drawing board. I wish we got feedback...

Texas > Lockhart: Terry Black's Barbecue

Terry Black's Barbecue 900 North Colorado St. Lockhart, TX 78644 https://www.terryblacksbbq.com/lockhart Been wanting to try the new Terry Blacks in Lockhart. It's funny how many blacks signs are up making sure you know it's not "the original", I guess things with family can get ugly. Anyway...

    Creekstone prime ribs

Finally got around to cooking four bones of the creekstone beef ribs. Got these on sale a while back. While not the best I've gotten my hands on, they rendered well and had pretty good moisture. Cooked about 6.5 hours on the jambo. No wrap, no spritz. I love burning sticks on the weekend when I...

    Grill master Snoopy

My wife surprised me with an ornament she found. Looks like it's from several years back. I love it, combines two of my favorite things, grilling and peanuts. Anyone else seen it before?

    Shotgun shells

Finally gave them a try. Followed the video from meat church pretty closely, just didn't sauce at the end. Might change that next time. Also will add more cheese and possibly some breadcrumbs to the meat to lighten it up a little. Overall, I'm a fan and will definitely do it again.

    Chuck roast and beef belly.

Cooked and shredded a chuck roast, salt pepper along with some cow cover hot. Served with Brussels sprouts over polenta. Then did a beef belly with slap yo daddy beef rub. Both smoked with post oak and pecan. Beef belly was interesting. Had to trim some fat out and then I cubed and sauced it...

    Grilled eggplant sandwich

Went vegetarian tonight. Grilled eggplant on ciabatta with provolone, tomato and roasted yellow pepper. Paired with an Falanghina from Italy. Thanks to friends of ours we have been discovering a whole new world of Italian wines. Where has barolo been all my life??

Texas > Seguin: Burnt Bean Barbecue Co

Had a PTO day left I had to use so the wife and I drove up to Seguin to go see Ernest. Pretty good size line for a Thursday. Got in line about 10:40 and took the food to go. We walked out as the noon bells were chiming in the park. Ordered way too much food. Brisket fatty and lean, pork ribs...

Change of plans, turkey to the rescue.

It is so darn warm here, I had to have a change of plans. Originally it was going to be beef ribs on the jambo. But it's way too warm to sit out and run a fire. I could do it, but it would be miserable. If only there was a smoker I could light, set and pretty much forget.... Oh wait! I have two...

Pizza on the uuni tonight. We do it almost every week. After a couple cocktails we've switched to a simple bogle zin. There's some pepperoni hiding under there. We keep it simple.

    Franklin pit email

To my surprise I got an email today saying my number is up for a franklin pit. I very vaguely remember signing up, I think back in September? I think it was one of those evenings when I had a little too much gin. I considered going for it for a few but that probably wouldnt go over so well as I...
