    Smoke day brisket

    15lbs brisket Wrapped in butcher paper at 170 it, then pulled at 201, it probed tender. Rested for 2 hour and cut. It was delicious. The flat was the best I've done! Happy smoke week end everyone.😋🍻

    Spatchcock turkey?

    I'm going to smoke a turkey this weekend. I've done many many turkeys on the wsm but never spactchcock. What is everyone's thoughts on smoking a turkey, spatchcock or not?

    New rub

    I ordered a new rub from a BBQ place that will be opening in oakland, Horn barbeque. Tried on some St Louis ribs. 22 wsm for 5 hours at about 235. No foil. Delicious really liked the rub!!! but could have been a bit more tender.

    Kettle Pizza

    Just purchased a kettle pizza today. I am gonna use it tomorrow. Cant wait! Just curious if there is any tips people have? Also has any one cooked anything besides pizza with it? Like bread or chicken, potatoes, anything else?

    Pork loin

    I'm gonna smoke a boneless pork lion today. Picked it up for .99 cents a pound. Plaining to cook at 225 to IT of 140. Gonna do a simple rub and glaze half way through. Will slice up for eating or sandwiches. Any tips or other suggestions as I have never cooked a pork lion before?

    Water pan

    I have a 22 wsm and I've used water and not used water in the pan . For me it's much easier to control the temp with water. Also I didn't noticed a whole lot of difference in the cooks. I read that a lot of people don't use water in the pan. What's the reason for not using water? Thank you

    Hello from SF Bay Area

    Got a 22 WSM about 4 yrs ago. Checked this sight out then. Just recently came back and wanted to become part of the conversations. Thank you to everyone that posts there cooks and recipes!
