    Pluma

Tasty pluma last night. Done over B&B. Cooked to about 150°. Plated with some asparagus and oven-baked ranch potatoes. Only salt and pepper on the pork. A little olive oil. And I'm a sucker for apple sauce! Have a great weekend, everyone.

    A nod to Chuck!

So imho Chuck makes some of the best looking burgers around...he's darn good at it. Thought I'd start the thread in hopes of him (or anyone) posting more burger pics 😀 Home ground blend of chuck, brisket, short rub. Medium grind. Hot skillet on the Genny. Sliders for my son, double...

    Pizza

Kept this simple. Got my stone up to about 800° with help from the vortex. Raised the stone off the grill using fire bricks. Came out nice!

    Enchiladas!

Spatched a bird. Used it for some enchiladas. Veg for some tomatillo salsa. Blended. And served. Apologies for excess crema. Added some rice in the side...didn't get a pic. Thanks for looking. Good week, everyone.

    Ribs

So i got a pack of Iberico Costilla ribs. Added some good rub. About 2.5 hours in 3.5 hrs in. Wrapped in pink paper at this point. About another 1.5 hrs. Only one rack glazed. Blues Hog. Sorry...no plated shots. Served with Caesar salad and really good mac and cheese. Some of the...

    Falafel

Had a hankering for good falafel. So I made some. Indoor cook on this one except for the pitas. Made the mix. This was a pretty basic recipe. One cup quality chickpeas soaked for about 15 hours. A ton of herbs, cumin, ground coriander seed, garlic, cayenne. I'm out of sambal oelek; hence, the...

    Gyros

Think I might've posted this before? Good eats for sure. 90/10 lamb-to-beef ratio. Seriouseats.com recipe. Started with homemade whole wheat pitas. Indoor cook. Browned the meat. Under the broiler for about 2 minutes, then served with some rice.

    Couple recent cooks

Not much to see here. Sorry for the lack of action shots. Deep dish pepperoni and sausage on Saturday. One slice and I was done. Good but filling. Didn't get the sides as golden as usual. Made a tian. Broke in a new tagine outdoors, since boiling milk indoors makes me nauseous. Also, and more...

    A few recent ones

Happy Thanksgiving, everyone. Just a quick photo-dump of a few of the latest cooks. Love seeing everyone's skills, techniques, and photos. No plated shots here...just the cooking. Did a smoked chicken on the wsm a couple weeks back. Did an al pastor variation courtesy of SeriousEats. This...

    Tacos

Apologies for yet another taco post. We do some version of tacos weekly. Growing up, my fare was the basic, American version: ground beef, diced onion, packaged mix, boxed hard shells, shredded cheese. It actually conjures up memories of comfort, family, and sentimentality. I'm happy that this...

    Made some bread

I picked up a copy of Ken Forkish's "Flour Water Salt Yeast" and baked the easiest recipe in the book: Saturday White Bread. My wife is normally the baker...I'm not very good at baking anything except No Knead bread, which is fairly similar in taste and texture. Enjoyed making this one. I...

    Scampi pizza

So I made some shrimp scampi and turned it into a pizza. Tasty. Sauce was 1+C ricotta, homemade pesto, Romano, and half the scampi sauce mixed in. Dough, rested. Par-cooked the dough for about 2 minutes. The topped with sauce, shrimp, sausage, fontina, Romano. Cooked. Bottom. Served.

    Some recent cooks

Peruvian chicken. Made some tacos and sandwiches. Mortar and pestle for the paste...garlic, cumin, paprika, salt, aji amarillo, pepper, white vinegar, veg oil. Slather-up the chicken. Fridged for 8 hrs. No shots of assembled tacos. Sorry. They went fast. Grilled some boneless short ribs for...

    Pozole

I'm helping aging parents who are old-school, die-hard New Englanders with a Scotch-Irish background and a taste for plain food. I cook food for them as often as I can. No red meat at all and they don't do spicy food well. I grew up not far from the ocean, having eaten a great deal of fish...

    Tacquito Tuesday

My family is trying to be more consistent about steadfastly maintaining Taco Tuesday. Or Fiesta Friday. Depends on our schedules. My wife and I are far more adventurous about food than our son, who will basically only eat ground beef tacos in a hard shell on such occasions. So I have no pics of...

    Couple of pizzas

So this isn't normally my style--I usually opt for less cheese--but I had two 10 yr olds who really like cheese. Sauce was excellent, but is well-hidden beneath the cheese. Plain. Sausage, pepperoni, mushroom, fontina. Way too much cheese for me, but the boys devoured it. Best part of the...

    Little help please!

Can someone recommend a good gasket kit for my wsm? You can see the issue I'm having...it's mostly the door. Thanks!

    Meat and fruit

Wicked simple. Marinated some flank steak in worcestorshire, Dijon, and tamari sauce. Added garlic and scallions. Sat for about 3 hours. Made some fruit on sticks. Watermelon, cantaloupe, haloumi cheese. Fairly healthy. The got brushed with honey and balsamic. Crazy easy cook. Sorry...no plated...

    Peruvian Chicken Sandwich

Hi everyone. Made some killer sauce for this sando. I normally do this spatched and served with sides, but I recalled an old cook from Kenji at SeriousEats. Apologies...not many grilled shots. Crazy flavor in this paste. Garlic, salt, cumin, paprika, black pepper, white vinegar, veg oil...

    Some grilled proteins

I've been bad about posting cooks lately; apologies. Here's a few fairly recent cooks of some grilled meat. Some steak tips. Mostly a NE thing. Some tied pork. These were tasty. I left the ties in. No noticeable difference. Got them to temp. All cooked on the Performer. Sandwiches...
