Adjusting Burners on Genesis II E335

Spring has Sprung in Middle Tennessee as a young man's , ahem, mind turns to grilling. I cleaned out my grill this morning and one of the burners was giving yellow flames. Pulled the burner tubes and notice this one's intake was restricted from the factory much more than the others. I...

Time to clean again. Have a few quick ??

Its time again to clean my Genny II. I have the cast iron ceramic grates with the stainless heat deflectors and flavorizor bars. I usually soak the grates and the stainless bits in the sink with some dawn while I scrape out the cook box. Any reason I can't put these in the dishwasher??

    John Fogerty

I had the extreme pleasure to see John Fogerty last night at a venue south of Nashville. I have, at least for 50 years, enjoyed his and CCR's music. This was my first opportunity to see him. He was celebrating the return of owners rights to his music. His two sons were in the band with him...

    Help With BBQ Recipe

Hello All! I have a BBQ Sauce Recipe I will share but before I do I have a question. It calls for a Peck of Tomatoes that have been cooked and run thru a sieve. Being the lazy sort, I'm thinking of using store bought tomato puree. Since a peck is 8 quarts, would 8 quarts of tomato puree do...

    Help with Feet

I retired at the end of January. The company I worked for was asking for volunteers for an early retirement package. I took the opportunity to move to Central TN to be with son and his family (grand children). To help get me out of the house I got a part-time job at a big box home...

    Porcelain Cast Iron Grates

I think I'm leaning towards the Genesis E-325s. Hopefully I'll make up my mind by Memorial Day when grills should go on sale. This grill has the porcelain coated cast iron grates. Do these need any special care to preserve the porcelain?

Thinking of Going to the Dark Side

Good afternoon all, I am a LONG time Weber Kettle user, since the '80's. I haven't used my kettle much in the last few years. I have recently retired and am in the process of downsizing and relocating to the Nashville area. I am giving my kettle away but am considering replacing it with a...

    Texas Pete is being sued

Man Sues ‘Texas Pete,' Claims the Hot Sauce Isn't Made in Texas I live in Winston Salem where this has been made for generations. Even before I lived here I was never under the delusion it was a Texas product.

Virginia > Richmond: ZZQ Texas Craft Barbeque

Went there while in town for a graduation. When we arrived there was a line out front which is usually a good sign. Ordered a Brisket sandwich, Jalapeno Mac & Cheese and Oranges Texas Caviar. They slice the brisket right in front of you. These guys are legit and are passionate about their...

    Labor Day/Birthday Butt

Cooked this fellow this weekend. The offspring including my granddaughter are in town for my birthday which happens to fall on Labor Day this year. First cook in almost a year. Took about 14 hours. Came out black as night(too much smoke maybe). Tasted well and was moist and tender. Used this...

Interesting - Mistake Turned into Blessing? Temps and Turkey

We had a small gathering this year and I decided to smoke a bone-in breast. Dumped in a lit chimney followed by an unlit chimney. Waited 'til the heavy smoke was gone and put everything back together. We had good weather but the WSM struggled to stay above 290, rarely hitting above 300. The...

    Baby Back Method from Thermoworks

Sometimes the stars align. Baby backs were on sale at the local store and I received this article from Thermoworks. Essentially 3-1-1 if you want competition ribs or 2-2-1 if you want fall off the bone. Great read. Gave it a shot and worked out very well. They were done in 5 hours and were...

Please edumacate me about the Hunsaker

I have an 18" WSM and mostly do low and slow butts with an occasional meatloaf or Prime Rib or Turkey during the holidays. I have an Auber to control my low and slow cooks. I have been intrigued by the Hunsaker Vortex either the basket and plate or just the plate. Does this work with temp...

    Maverick Issues?

I've been using a Maverick ET-733 since I bought my WSM. Last couple of cooks it doesn't seem to respond very will to temp changes in the meat. For instance it will register when the meat has stalled but will not indicate when its coming out of the stall until its over-done. Fresh batteries...

    Mr. Brown ???s

I've been doing pork shoulders on my Weber Kettle and WSM for years. Being in NC, I use a vinegar based sauce when served. I just recently tried Mr. Brown and found it a little to peppery when combined with the vinegar sauce. I did like the crust. Has anybody experimented with Mr. Brown by...
