    Small briskets, less than 11 pounds dry out too quick. I did one and at the end it was a brick. Select a bigger brisket under 13 #, it cooks longer (is that a word?) but will cook better especially if you don't trim it.     How to make the charcoals very hot for searing?

    Air, you need air. Take the lid off and let the charcoal get hot. Open the vents all the way. I have gotten my Kettles so hot you suffered getting near them. If it's a longer cook just set the lid off one side, temps will rocket up.

    Scrape down the sides, get a new door. I had a runaway fire from residual fat, damn thing looked like a flame thrower. No damage but the inside had to be brushed, washed and re seasoned. All of the seasoning had burned and was flacking off. It was a mess.
