    Gizmo for cooking gizzards

I possess a 22 inch kettle with the hinged cooking grate. Imagine I'm cooking indirectly a whole chicken and would like to cook gizzards off to the side. To hold the gizzards, would a perforated container be preferred or what???

My latest post in Beverages never appeared in "New Posts"

Today I posted in the thread entitled Limoncello and it never appeared when I clicked on "New Posts". What's up with that?

    Hog Jowl and its advantages

Consider it a rich chunk of bacon. Fatty and rich tasting, it slides amicably down your throat. It's extra content of fat gives French patee more smoothness and spreadability and that extra richness. I strongly recommend it be substituted for regular pork fat in your recipes for sausages and...

    Need replacement for Maverick ET73

The Maverick has been a good friend since first used in 2007 and now it may be giving up the ghost. 8,,,,,(( I've always used two food probes for my Maverick setup without a hitch and that's what I'm looking for in a replacement. NO bells and whistles. Just accuracy, two food probes to...

    Issue with TelTru Thermometer

The glow in the dark thermometer was installed in my 18" WSM in 2007 and has worked well. When not in use the WSM was stored indoors yet now there is condensation on the interior side of the lens of the thermometer. How do I chase away that condensation????

Royal Oak All Natural Charcoal Briquettes

Just finished using my first bag of the stuff. My own opinion is that it burns hotter and much faster but it flavors the food a little better than Kingsford. I'll stick with Kingsford however. I'm certain that this has been posted before now.

Weber's Char Baskets Come Thru for Steak

I premeasured one, only one, Char Basket (hereafter CB) with unlit Kingsford and then lit them in the Chimney. Once lit, the charcoal was poured into the CB and the CB was placed on the bottom grate near one side. With the grill in place the kettle was allowed to reach temperature in about...

    An update on Char Baskets

On my 22 inch kettle I cooked five chicken pieces, four half onions and five corn on the cobs. The fuel was two char baskets filled with Kingsford. Cook time for the chicken was almost an hour at 325F (Weber lid thermometer) and both vents more than half closed. It appears that at least half...

Tomorrow I'm goin' in: Rack of Angus Beef Center Cut Back Ribs

On my 22 inch (EDIT) Kettle I'll use two char baskets with slightly less than half full of lit charcoal for a 1.5 - 2 hour cook. The top vent fully opened (maybe less) with the bottom at about 1/8 opened - after reading all of the posts to my inquiries. 250F to 325F..

Advice needed: Ribs using 22 Inch kettle plus charcoal baskets

I'm experienced using the WSM but not the 22 inch Kettle and so here goes. I would like to cook a rack or two of pork ribs in the kettle using the charcoal baskets, at a temperature of about 300-325F so they're done in about 90 minutes (or maybe in a bit more time). What would be the method...

Question on recipe for 22 inch kettle

The grilling guide accompanying my new Weber kettle indicates that for a 1 inch steak, approximate total grilling time is 6 to 8 minutes. I take it to mean total time overall and not 6 to 8 minutes per side? I'm a bit naive here. And to achieve "high heat", 450 - 550F, is the cover left on...

    Removing hard water spots

To remove water spots on the exterior of both my WSM and Kettle, would an acetic acid solution be used? It's the same stuff used for cleaning the insides of espresso machines and Keurigs. Basically Keurig brand descaling solution?

Gunk stuck to the bottom of my kettle

...and it's really stubborn to remove. Should the kettle be preheated with some charcoal followed by scraping the gunk with a stainless steel brush or what? Maybe some Easy Off oven cleaner, would it harm porcelain finish?

Hinged cooking grates for 18 inch kettle questions

Seems like if I used the 18 incher for two racks of ribs, wouldn't they be too large to open the hinged sides for adding more briquettes, requiring removing the entire grate to add more briquettes??? I really need some replies. TIA!

    Substitute Kingsford for Weber Charcoal

This may have been discussed previously. Recommend amount of charcoal for direct heat for my new Weber Original 18 inch grill: 30 briquettes for Weber charcoal 40 briquettes for charcoal (the other brand!). Okay then how many Kingsford briquettes would substitute for 30 Weber briquettes as it...

    18" WSM and rib racks

I've cooked at least three racks of ribs (babies or whatever) on said WSM several times since 2007 with great satisfaction. I don't see any reason or advantage to substitute a kettle for the 18 incher and I don't own a kettle.
