    Costco Rack of Pork

I cannot believe I've never done one of these until today. What a screaming bargain, and what a delicious meal (if I may say so myself). If I had to describe it, I'd' say I did it 'Provencal style' - made a paste of dijon, EVOO, lots of fresh garlic, S&P, and dried thyme and rosemary. Scored...

    I Don't Get It

I thought it came out good, but some said it was dry.

    Kingsford Pellets at Lowes

I don't know if they're any good, but at this price, I had to find out. 17lb bags.

    Meat Church Chicken Chili

Did a couple birds the other night, anticipating leftovers so I could make this recipe. Night one, we did simple chicken with roasted broccoli and rice. Did two birds to ensure plenty of leftovers. Tonight, did the Meat Church chili recipe (linked below), which is super simple and super...

    I'm Going In!

It's maybe been a dozen years since I've done a brisket, but I've been having the urge lately. We've got a gorgeous weekend and a kid turning 16, so there's no excuses. And when you can get packers at Costco for $2.99/lb, why not? I picked up a 13.85 pounder that I plan to trim somewhat...

    Cooking on Someone Else's Grill

I picked up a pack of lamb chops at Costco on Saturday and put them in a marinade of olive oil, lemon juice, garlic, oregano, rosemary and S&P yesterday morning. Slight change of plans and we ended up going to my parents' house for dinner last night, so I threw the protein in a cooler and...

    Kids Away

Kids had freshman and jv away football games tonight that were far enough that we decided we weren't going. Decided it was date night at home and cooked up some filets. 250F on the SmokeFire for about 30 minutes until they hit ~110F. Then I kicked it up to 550 and gave them about 90 seconds...

    Winter is Coming

I need to double check the price of the Kirkland pellets. But I've been working on a bag of these and like them. Might need to grab a handful of bags to get me through the cold season. $14.99 for 40lbs ain't bad. https://www.lowes.com/pd/Pit-Boss-Competition-Blend-40-lb-Wood-Pellets/5002601781

    First Butt on the Sear+

Off to a good start this morning. Headed to our sons' football scrimmage in a bit and looking forward to monitoring the cook from the bleachers.

Haven't done this in a while.

Some would argue it's a waste of a perfectly good beer (minus a sip or two), but it's fun.

    Pre-4th Burger Night

50/50 mix of short rib and chuck with a double coarse grind. Heavy salt and pepper with good ol' American Cheese for its melty goodness. 'Gus marinated in EVOO and balsamic vinegar with S&P then finished with some shaved parmesan. Pollo asado later today.

    Father's Day Ribs

SmokeFire strikes again! Mixed up a batch of BRITU rub and sauced with Wegman's Memphis style. This is pretty darn good for a store bought sauce and not a bunch of high fructose corn syrup and other junk. Anyway, hit the ribs with Smoke Boost for about 40 minutes, then at 235 for a couple...

First 'Real' Cook on the Sear+

I did a quick cook the other night, but don't really count that. Last night was the first 'real' cook on the new toy. Tri tip was rubbed in a combo of Kinder's "The Blend" and their woodfired garlic seasonings. I let it sit out for about an hour after seasoning. Put the tri tip on the...

The Day She Came Into My Life

She arrived this morning. Assembled after work and now performing the burn-in. Startup to 450F in about ten minutes. No Weber pellets at Lowes, so I grabbed 20lbs of Bear Mountain Red, White and Blue for $12.97. I think there's a Cabela's or Costco run going on the calendar for this weekend.

    Well, I've Done It...

After a couple years looking at these things, I finally pulled the trigger on the ELX4 this morning. Looking forward to being in the club! Only upgrade I'm thinking about right now is the casters. Any recommendations?

Fair Price for a DR WSM?

Mrs JimK has given me the go ahead for a SmokeFire, so I'm clearing out the Performer and the WSM (forgive me). The WSM is a 2006 (DR) and is cleaned up and ready to go. I only have one cooking grate, but it is in otherwise very good condition. A little caked on 'seasoning', but it cleaned up...
